Tuna tataki

  • 200 g fresh tuna (sushi quality)
  • 50 g black sesame seeds
  • 50 g white sesame seeds
  • truffle oil


  • 100 g green asparagus
  • olive oil
  • 1 head of romaine lettuce

Soy Mayonnaise

  • 4 tbsp mayonnaise
  • 1 tbsp soy sauce
  • juice of ½ a lime


  1. Mix the mayonnaise with the soy sauce and the juice of the lime with a spoon. The sauce will have a thin structure.

  2. For the tuna we start by sprinkling the black and white sesame on a flat plate. Mix well with your fingers.

  3. Then lightly coat all sides of the tuna with truffle oil and then roll the tuna through the sesame mixture. Make sure that all sides are properly “covered” and press gently.

  4. Put a frying pan without butter or oil on high heat. Once the pan is hot, place the tuna in the pan and sear each side for 15 seconds. If you have had all sides, remove the tuna from the pan. Cut the sesame tuna into nice equal slices of 1 centimetre thick.

  5. Next the asparagus, once again put a frying pan without butter or oil on high heat. Salt and pepper the asparagus and place them in the hot frying pan and roast the asparagus. When the pan starts to smoke, sprinkle the asparagus with olive oil. Bake the asparagus 45 sec per side and remove from the pan.

  6. Wash the romaine lettuce and place the leaves on the plate like tubs. Drizzle some of the sauce over it and then divide the asparagus over the plate. Drizzle the sauce over it again and divide the tuna slices over the whole plate. Garnish with a final drop of sauce.
