YOGHURT BREAKFAST PARFAIT

Ingredients

Yoghurt parfait

  • 500 g plant based stracciatella yoghurt
  • toasted chocolate almond muesli
  • 6 ramekins

Strawberry coulis *

  • 1 cup frozen unsweetened strawberries
  • 1/2 cup sugar
  • 1 tablespoon lemon juice

Instructions

  1. We start with making the strawberry coulis. In a medium saucepan, combine the strawberries, sugar, and lemon juice.

  2. Bring to a boil over medium-high heat. 

  3. Transfer the mixture into a blender and purée until smooth, strain, and set aside.

  4. In a small ramekin add a thin layer of the strawberry coulis.

  5. Layer the yoghurt in a thick layer on top and top it with the toasted chocolate almond muesli.

Notes

* You can use store bought strawberry jam instead of making the strawberry coulis yourself to make it even easier.
